First: Cook up some meatballs!
Ruth uses:
Ground Turkey
Seasoned Breadcrumbs
Parmesan Cheese
1 Egg
Some Milk
Fresh Garlic
S&P
Garlic Powder
Oregano
Brown the meatballs and then let them finish cooking in the sauce so they stay super juice and the sauce picks up all that meaty deliciousness.
Meanwhile, slice the squash into 1 inch rings.
Scrape the seeds out and season them.
Bake for 30 minutes on a lined sheet at 400 Degrees F (205 C)
Flip rings 1/2 way through baking.
Once they're done, nestle those yummy meatballs in the center of each, top with sauce and cheese.
Broil until bubbly.
