Twice Baked Sweet Potatoes

Ingredients:

6-8 Medium Whole Sweet Potatoes (washed)

1 Cup shredded cheddar cheese

1/4 lb butter

Salt & Pepper to taste

Cooked & Crumbled Bacon (1 slice per potato)

Directions:

Pre-heat oven to 350 F (177 C)

Bake Sweet Potatoes for 1 hour (or until done)

Slice in half.

Scoop out potato when cool enough to handle.

Beat together until fluffy:

Sweet Potato, cheddar cheese, butter, salt & pepper

Fold in bacon.

Spoon mixture into skins

(or discard skins and scoop into a greased casserole dish).

Top with extra cheese and bacon.

Bake for 20-25 minutes if in skins.

Bake 45 minutes if baking in dish.
